Tuna Belly

Tuna belly (fatty tuna), or Toro is generally considered the king of sushi ingredients. It doesn’t have much use in other dishes. Only a small portion of it is available per tuna and it is usually very expensive. Tuna belly is very oily and high in omega3. The best tuna belly sushi will literally melt in ones mouth. This can happen with an otoro sushi, or supreme tuna belly sushi. It is the lowest area located on the tuna belly

SWORDFISH

Swordfish is a large elongated round seawater (marine) fish belonging to the family Xiphiidae. Classed as a white fish, the flesh is very meaty. Also a popular sporting (game fishing) fish, they can reach a size of 14ft and 1,400 lb (that’s 650kg). Swordfish are mainly caught by the long-line fishing method and can be found in all tropical to temperate oceans and Indian Ocean is also popular for quality sword fish. Suitable substitutes for swordfish include Tuna, Marlin or other firm fleshed fish.

KING FISH

King Fish are also called Spanish mackerel and has a streamlined body, with a tapered head, and very small scales that cover the entire body except the pectoral fins. The color is iridescent bluish green on the back, lower sides and belly gray to silver, and the lateral line starts high near the gills and drops sharply below the second dorsal fin. The king Fish weights range from five to thirty pounds. The maximum size about 75 to 90 pounds, but in the marketplace the average weight is five to 20 pounds.

King mackerel are found in tropical and sub-tropical waters including and inhabit coastal areas, usually in waters less than 240 feet deep and coral reefs, offshore currents, tide rips and large bays.
